Mellow Monday

Hey friends! I’ve been eating a lot of the same thing lately, so I thought I’d share my eats on my day off – remember, I’m still in eating disorder recovery, so I hope this post may help another person struggling with disordered eating. This blog is for fun, of course, but if I can reach someone else out there who struggles with an ED or mental illness, then that would be fantastic!


I woke up late (hello day off!), so I had brunch around 11:30 instead of lunch or breakfast. I’ve been having a love affair with savory oats, y’all – they’re delicious, filling, and super simple with just a little bit of cooking.

Simply Savory Oatmeal

– 1/2 C Quaker Oats

– 3/4 C milk or soy milk (I prefer regular milk in savory oats)

– S+P, garlic powder and parsley

– 2 eggs

– 2 pieces of bacon, chopped into smallish bites

– Cheddar cheese

– Red enchilada sauce (I use canned most of the time, but my father-in-law Joe sent us some homemade sauce, so I’ve been using it)

– Sour cream

Directions: Add S+P, garlic powder, and parsley to oats along with milk – stir and microwave for about 3 minutes (or, if you’re adventurous and have the time, make it on the stove top). Side note: you can add a bit of butter for a creamier texture to the oats. Chop up bacon and fry in a cast iron skillet …. once bacon is about done, add two eggs and fry. Once done to your liking, place the eggs and bacon on the hot oatmeal. Add cheese, enchilada sauce, and sour cream (I eyeballed my portions).

After taking a shower, I checked the mail and saw that I received some fashion-y goodies!

Snack #1

After putting away my cuties – around 2:30 – I needed a little something-something, so I put together a bowl of cucumbers and carrots with ranch + Catalina dressings, and I also had a bite of venison sausage with a bit of honey mustard.

Soon after eating my snack, I needed to head to our medical/hospital district for a psychiatrist appointment – Luke made the mistake of coming with me and ended up waiting in the car for nearly 45 minutes. My doctor is usually lightening fast, but today I saw the nurse practitioner, who I rarely see … she took her sweet time asking some rather mundane questions which Dr. Jenkins knows not to bother with anymore; she was nice enough, but I prefer seeing Jenkins.

After the doctor’s office, Luke and I headed to Sam’s Club and United – Luke spotted a four pack of prime filets at Sam’s and declared that we were having steak for dinner (I cannot complain ๐Ÿ™‚ ). We also stopped by the liquor store to grab some Marker’s Mark bourbon … Luke snapped a pic of the Maytag bleu that we put on steak and the whiskey because, well, he’s a man.

Snack #2

I was craving some veggies around 5:45 – I had a few tomatoes, some celery, and a handful of sugar snap peas with roasted garlic hummus, black bean and corn salsa, and a dab of ranch dressing.


Luke seasoned the filets with S+P and cooked them to blue rare, our favorite way to have steak! SO GOOD! I made a little salad on the side with spinach, tomatoes, more sugar snap peas, and some broccoli with salsa and dressing.

Caprica even got a piece of filet!

After dinner, I wanted a new profile pic for Facebook, so I refreshed my makeup and played with the camera on my new phone – this pic is a tad bit blurry because I enlarged it in Picasa, but hey, it works for now!

Luke went to the gym with a friend, and upon arriving home, Caprica immediately made herself comfortable on his chest.

Now I’m watching House Hunters and drinking some coffee … I’m sure I’ll hit the hay soon (I have one more day off tomorrow, which is super nice, so I plan on sleeping in again!).

A Few New Pretties

After dinner tonight, my Free People gift card which I’ve been expecting popped into my inbox, and I was able to order a few more things which have caught my eye – see the previous post for Currently Coveting – but I had to make some decisions on what I wanted to buy, and it turns out that the Teagan Huarache Clog was a liiiittle expensive for what I want, so I decided on the below ~

… aaaaand my last purchase was, naturally, a pair of Tevas in black … I love white, but my white shoes are simply hard to keep clean without washing them by hand often, so I chose black!

Ahhh I’m excited for my goodies to come … I’ll review them once they arrive! ๐Ÿ™‚

Currently Coveting I

If you know me, you know that I work at an Express Outlet and that I simply adore my job … and obviously, I buy most of my clothing from my store and

But, if you know me also, you know that I also have a love affair with Free People, Anthropologie, Modcloth, Forever 21, and Urban Outfitters (among others) for unique pieces that really encapsulate my style. Therefore, I’m going to start an edition called “Currently Coveting” on the blog which focuses on places other than Express. Express will have it’s own posts later on. ๐Ÿ™‚


Caged Lucite Basket Bag in Honey – Okay, so yes, I already bought this during the 50% off sale … I’m still coveting it, however, because it hasn’t shipped yet … it’s simply on back order until the 1st of February. As much as I love my Brahmin bags, I’d like to have a unique and highly structured bag, and this one fit the bill. It was a debate between the Honey and White, but ultimately I settled on Honey.

Alepel Cobalt Feather Slides (size 9) – these are on sale right now, but I’m *hoping beyond hope* that they’ll make another cut.

Soludos Tasseled Camel Espadrilles – I have a pair of Velvet Soludos which I bought on sale, and y’all, they are BEYOND comfortable. I wear mine to work often, and I’d like another pair sometime. These Soludos Slides are also adorable.

Silent D Fillomena Clogs – Oh Silent D, I’m forever caught in a loving relationship with you with your comfortable materials … I have four pairs of Silent D shoes, and these clogs are definitely eye-catching and trend-forward and are something that I’ll try waiting to go on sale. ๐Ÿ™‚

Pleated Colorblock Dress by Guapa – this little number is quite pricey for what it is, but damn is it not adorable. Again, I’ll *try* waiting for a sale, but I almost doubt it’ll last until then. A girl can dream and keep her fingers crossed though.

Knotted Chiffon Headband (particularly in muted yellow and sapphire) – I love me a great headband, and these are too cute with the trendy knot on top. Love love love.

Free People

Galloon Lace Racerback Bra – a girl can never have enough colorful lacy bras, and I’m currently coveting the colors Orangesickle, Ivory, Rose Wine, Sea Fog, and Jungle Green …. for $20 a pop, they’re a great deal!

Easy Tiger Midi Skirt – I love this because it feels like a fiercer take on a skirt than the popular leopard print.

Juniper Jumpsuit – I haven’t owned a pair of overalls in a LONG time (hello 90’s), but this jumpsuit looks so modern. Stock is running low in my size though, so I’m not sure if I’ll get it!

Miss Daize Bralette – I own this in black and find it’s TTS … now I’d like to purchase the Desert Flower colorway. This bra just makes you feel pretty!

Platform Universal Mesh Print Teva –ย ย Teva’s sandals are proving to be a popular shoe for spring and summer, and I like the ones with a bit of a platform. For $70, they’re a great buy IMO … I can see myself possibly buying these if my eyes weren’t on another shoe ….

Teagan Huarache Clog – Okay y’all, this is my #1 shoe pick!! I really, really want it in Rose Gold … if I can’t snap up the Rose Gold, I’ll try nabbing the Midnight or the Tan color. SO cute, so Central/Southern American, very beach-y vibe … something about them just makes me so happy. *Fingers crossed* I can nab a pair.

And last but certainly not least, I love the My Luckiest Star Single Earring. It’s such a playful little piece, and it’s a great price.

And that’s what I’m currently coveting from Anthro and FP! I’ll do a few try ons at Express next and do a post about what I’m loving there very soon … warning, it’s a LOT, and I’m trying to narrow down my options. ๐Ÿ™‚ Perhaps a try on will help!

A New Focus: Clean Eating

A few days ago, the hubs texted me from work – “I need to eat better,” he wrote sadly. Immediately, I heartily agreed with him and signed on to craft a healthier menu for us as our diets have been high carb and high sugar as of late, especially over Christmas and New Year’s (ugh). It’s a transition that we need to make, however, since it’s no longer the holiday season and is (supposedly) the time for resolutions and other forms of self-deprivation. ๐Ÿ™‚

Now, as you may know, I’ve suffered from disordered eating for YEARS. Hell, I still struggle with it – I ain’t gonna sugarcoat it. As I learned at Center for Discovery in Bellevue, WA, I need to avoid the “diet culture,” so diets such as Keto, Paleo, etc. are off limits for me (and with good reason … I could easily flip them into disordered eating and end up practically living on nothing as I have in the past, boo).

Thankfully, I’m aware of the dangers, and after a little discussion with Luke, we decided to focus on eating fewer simple carbs/sugars and hit the weight room more often (well, *I* need to hit the weight room more often … Luke is already about 200 lbs of muscle and works out regularly like a beast, damn him).

Thus, I decided to write out a shopping list and focus on fruits, veggies, good fats. and proteins (AND we also threw a little bit of CHEESE in there because, fuck, life would be a sad thing without cheese). We went to the store and come home with loads of fresh veggies, fruit, and chicken, not a frozen pizza or sad box of Kraft macaroni and cheese in sight (a personal victory, y’all).

I attempted to make my version of chicken spaghetti (which, admittedly, is *not* low calorie, and the recipe calls for a pound of Velveeta, so hurmph. I did my best and subbed 2% Velveeta and only used about 2/3 of the block instead of an entire pound … all hope was not lost).

Lazy Girl’s Chicken Spaghetti by Mandy (For Those of Us Without Time to Pretend to be the Pioneer Woman And Boil a Freshly Butchered Chicken for 50 Minutes Although I Have, In Fact, Done This When Luke and I Had Chickens … I Do Not Miss Chickens as a Side Note)


3 C cooked chicken (rotisserie is great for this)

1 C chopped bell pepper (I used green this time, but red is a good choice too)

1 C chopped sweet onion

1 C chopped celery

1 clove of Knoblauch (aka the Stinking Rose / garlic), minced

1 can cream of chicken soup

1 lb. of reduced fat Velveeta (or full fat if you want to walk on the wild side), cubed

1 small can of sliced black olives

1 can of Rotel tomatoes and chilies

1 16 oz. package of Angel Hair spaghetti


Cook and drain spaghetti. Saute bell pepper, onion, and celery until tender. Add the soup, Velveeta cubes, Rotel, and olives. Combine with chicken and spaghetti. Add S+P as needed (I season throughout the process, so I didn’t add extra at this point). Pour mixture into a 9×13″ casserole dish that has been sprayed with PAM or buttered (I went the PAM route). Bake 20 – 30 minutes at 350 degrees. Sprinkle cheese on top for the last 10 minutes if desired.

Voila! You have lazy girl’s chicken spaghetti. ๐Ÿ™‚

Luckily, Luke declared that the chicken spaghetti was a hit compared to his usual box of mac or cheesy tostadas, and I even enjoyed it too. And as a plus, it makes 10 to 12 servings (or a generous 8, if you’re like my household).

I also have another recipe to share very soon – it’s Luke’s mom’s gumbo which comes straight from Louisiana (that’s where my lover grew up). We ate it at Luke’s family’s house over the holidays, and Luke asked his mom (after all those years) for the recipe. I have yet to try to make it, but you bet I’ll be adding it to my recipe page if it’s a success.

Update: An Addition to My Hairband Collection

Yassou, y’all! So the Deepa-made Hellenic Wrap Headband from the post below DID, in fact, show up at my home in all of it’s Grecian glory! At first, though, this headband was admittedly daunting, and I regretted ordering it for a split second … I mean, it was HUGE and unyielding, bulky, lots of fabric, and I was uncertain of what to do with it exactly.

Thankfully, with a little luck and determination, I maneuvered it into something that looks like a headband – and that’s the point, after all! You style it as you like it. ๐Ÿ™‚

(Taaa-daa! This is my no-makeup night look featuring the new head wrap. Yay!)

It’s adorable, and I’d *absolutely* buy this again – if you can find one in store, SNATCH THAT SUCKER UP! And now I’m eyeing the Glinda Floral Wire Headband from Anthro after this fortuitous stroke with Anthropologie wrap headbands. They’re easier than you think to style! Seriously – it’s up to you how you’d like the head wrap to look.

If you’re daunted by a giant wrap such as this, I suggest the Knotted Chiffon Headband in various colors (I like yellow) and the Cheery Cheetah Knotted Headband (it’s a great little neutral) – it’s a pre-made knot on top of the band, very simple to just slip on your head! I hope to add these to my collection soon too. ๐Ÿ˜‰

I have acquired a cute new jumpsuit from Express and some sneakers from Free People which I hope to show off soon on here.

I’d also like to start posting a few meals here and there. ๐Ÿ™‚

Hellenically Swayed

I have a penchant to gravitate towards products with names that inspire me … take for instance this Hellenic Wrap Headband. I studied humanities and classics in college, so of course I’m drawn to the word Hellenic. I also remember studying the Hellenic branch of the Indo-European family of languages. Granted, when I spotted this headband on sale at Anthropologie, I had to snap it up (and an extra 50% off sale price is unheard of at Anthro – I assume they’re not selling as well as they have in the past?). I may *not* receive it, however, as the product is unavailable page precariously popped up after I placed my order …. damn it.

Fingers crossed for this Hellenic accessory to land in my lap in a few days! If not, Anthropologie, you may have to disappear from my little circle of clothing sites like the Minoan civilization.
