Cinnamon Coffee + A Successful Interview

Howdy! Well, my arms are *sore* from working out yesterday! Sadly, I didn’t have time to workout today, but I promised Luke that I’d go with him tomorrow. ๐Ÿ™‚

I started my day off with a newfound favorite – cinnamon coffee! Let me tell you about it! I learned that this is often what bed and breakfasts do to spruce up their coffee game, so I gave it a try a few days ago … I’m in love! All you do is sprinkle some cinnamon into your coffee grounds and then brew away!

Around 11:30, I was hungry for breakfast, so I scrambled a few eggs (of course I shared with Miss Serina) and topped them with salsa.

Luke took his chemistry lab final today, and he wanted to go to Chick-Fil-A for lunch! I didn’t take a picture, but I had a 12 piece nugget and large fries with Chick-Fil-A sauce (which I have not tried until today, soo yummy!). It was nice to go out to lunch with my hubs – it was nothing fancy, but we haven’t been out to eat in a while. Nope, I didn’t snap a picture – I was too busy living in the moment, as they tried to teach us to do in Residential.

After my late lunch, I took Serina on a long walk around the apartment complex where she met a few new humans and dogs. ๐Ÿ™‚

Soon it was time for my interview with Express, so I cleaned up my look a bit (no Birkenstocks, a nice Express jacket, etc) and headed out to rock it!

In an awesome stroke of luck, I was almost immediately hired on with Express – hallelujah!

I met Luke at Pak a Sak after my interview, and I picked up a Boar’s Head turkey sandwich for dinner. I added some cucumber, carrot, and broccoli to my plate and had some honey mustard and ranch for dipping.

And what have the kitties been up to, you might ask? Don’t worry – we haven’t totally abandoned them! In fact, they still lead pretty cozy, comfy lives with tons of sleeping, lounging, more sleeping … you get the idea. ๐Ÿ˜‰

Serina enjoyed eating dinner with me, and then we played some tug-o-war … treats followed!

We stayed up a little too late waiting for Luke to come home (and took a long night walk), but hey, I adore seeing my man. ๐Ÿ™‚

‘Til tomorrow,

A Day of Positivity

Alright, y’all, so I had a bad day yesterday. Guess what? Luke apologized, I’ve stopped pouting, I am OVER being sorry for myself … sometimes I just have to be real and post about my ED triggers (which are admittedly very upsetting for me, but again, I’m just trying to keep it real on here).

I woke up a bit low, yes, and I didn’t eat breakfast, but I soon got over my little mood swing and ate a bite of lunch after Luke left for school around 1. I also took Miss Serina on several walks, and that really helped my mood too!

I DID do something VERY POSITIVE today ~ I went with Luke to the gym and slayed an arm workout – I felt so much better after doing that! I haven’t been to the gym in a few months, and it’s HIGH TIME that I start my exercise routine again.

I’ll be back logging my eats tomorrow for sure. ๐Ÿ˜‰

The Day that Shouldn’t Have Been

Hey guys. Well, I’m trying to keep my chin up and keep on fighting the good fight against my ED, but days like today make it *very difficult* to keep on going.

Today was a dreary day that didn’t get about 48 degrees, and it was just not a good day. Luke woke up late for school and was in a mood, and he took off to hang out with a friend for a while. I admittedly was pretty cheerful until a triggering incident happened at about 5:45 in the afternoon (I’ll tell you about it).

Here’s how the day went “food-wise” ~

I enjoyed one of my guilty pleasures for breakfast -it looks like eggs on toast, right? Well, it IS … but it has a secret lurking beneath the egg that you cans barely see! You might spy a smidge of purple … yes, I eat jelly on my toast with my eggs. It’s SO good – don’t knock it until you try it! I was pretty happy after this meal.

After breakfast, I took a shower … while the puppy pooped all over the floor and promptly ate the majority of it ๐Ÿ˜ฆ . ICKY! I cleaned up, asked Luke to go to Petsmart for puppy shampoo, and Serina fell asleep after her escapade.

(She’s so cute that it’s hard to be mad with her.)

Lunch was very straightforward – a mix of veggies (carrot, broccoli, cauliflower, green pepper, and cucumber) seasoned with S+P and ranch for dipping. Nothing wrong here.

Luke went out with a friend to Blue Sky, a local burger joint, for some cheese fries, and he brought me back some, which was very sweet of him.

Unfortunately, this is where things turn badly – I ate about half of the fries and then I put the rest in the fridge for later. About two hours later,ย  I wanted the rest of my fries, but in Luke’s eyes, I was eating too soon and should be full from my earlier snack.

Basically I felt highly criticized for wanting to eat … this sent me into a SPIRAL of depression, sadness, triggered my body image issues, and I have now resolved to not eat much anymore. It’s too much to deal with, food is simply too complicated for an idiot like me. I also forced myself to measure my waist and felt highly displeased with the number I saw, so I need to get that down for sure. ๐Ÿ˜ฆ ๐Ÿ˜ฆ ๐Ÿ˜ฆ

At least Luke also brought pup home a Kong toy, which we put a treat in … she went to town, and it was super cute.

Well that’s all I have … this post really sucks, I realize. ๐Ÿ˜ฆ Oh well. Here’s to a better day tomorrow …

I’m a “GOTG”

Howdy guys! What’s going on today? I don’t have to work today, so huzzah!

Breakfast this morning was a big one! Three eggs, two pieces of honey wheat toast, a small avocado, and cucumber. I needed a filling breakfast and ate around 8:20 – I worked until 2, and I don’t like fast food at the mall, so I definitely needed a large breakfast!

At work today, one thing *really* stood out to me – I was learning about the different jackets and layering pieces we have at Eddie Bauer, and my manager picked out a specific coat and showed me the acronym “GOTG” on the label – it stands for Girl on the Go! I love that! ๐Ÿ™‚

Upon returning home around 2:30, I was pleasantly surprised that my hubby had made me a steak salad and a much-needed coffee!

Lunch was SO yummy … I’m lucky to have a hubby who thinks of me! ๐Ÿ™‚

Dinner was a throw-together meal on my part – 2 eggs topped with salsa, spinach, cucumber, and carrot topped with ranch, and a piece of toast with butter.

That’s all I got for today!

This ‘N That

Howdy guys! How are you?

I’m doing pretty well … I’m *about* to admit that posting my eats on a daily basis does wonders for my ED … therefore, I do believe I’ll give it a go.

Breakfast was delicious and very fillingย  – two fried eggs with salsa and a piece of toast topped with avocado and cucumber.

Lunch was equally delicious – I cooked 3 pieces of bacon and roasted some carrot, broccoli, cauliflower (my fav), and bell pepper. Then I put it all on a bed of spinach with half a slice of pepper jack cheese (the other half went to Serina, ha!). Toppings were ranch dressing and some black bean and corn salsa.

After lunch, Miss Serina was getting restless, so I took her on a 45 minute walk around the complex. My outfit for the day was fun – it was an Anthropologie dress with black tights. ๐Ÿ˜›My snack today was leftover veggies from lunch and salsa.

About an hour later, I needed more sustenance and had a few more veggies with deer sausage and ranch.Dinner was simple – I had about 1 C of Greek yogurt with a banana and PB.

Serina and I took a selfie!

More veggies and dressing as part of dinner … I had a Sweet Tart candy cane for dessert – talk about yummy and low calorie, you guys. Candy canes are a perfectly festive treat!

Luke and I enjoyed a nightcap of bourbon before going to bed!

Sooo … I *may* be working for Express AND Eddie Bauer this holiday season. Nothing is set in stone yet, and I plan on asking my manager at Eddie Bauer how many hours he can schedule me for at the maximum … but Express sent me an email saying I could interview with them on Friday, and I’d like to see what they say!

Til Tomorrow,

~ Mandy

Puppy + Patience

Hey guys, and Happy Tuesday!

Let’s talk about puppies and patience.

Obviously puppies needs *lots* of patience from their owners – potty training, accidents, chewing, nipping, early mornings, etc. Serina is certainly no exception, although at times it’s hard not to get frustrated, I’m the first to admit. Does this mean she’s a bad puppy? Absolutely not! She’s only been alive for 7 weeks and is sooo very new to the big ol’ world! Saying “off” and “no” are just part of the process – did you know that it can take puppies 4-6 months or longer to become potty trained? Yes, it’s true! (And can I get an “amen” for concrete floors in the apartment – they make cleaning up SO much easier than on carpet, tile, or wood.)

Serina is a giant reminder to exercise patience and grace … just as I should with myself, as I learned in residential this summer! I’ve had a terrible cold to boot, so it’s been difficult to be patient and practice grace at times with her, especially when I’m literally feeling like the walking dead. But the joy I feel from her in my life FAR outweighs any rough moments, and I gotta admit, she is an amazing cuddle buddy for when I’m feeling especially icky! (And thankfully, I work on Friday and Saturday this week, so I have plenty of time to recover before heading out into the world again.)

Onto my eats for the day!

For breakfast, I fried two eggs, toasted a slice of bread and spread it with butter … I topped my eggs with black bean and corn salsa, and cut up a few cherry tomatoes as a side. ๐Ÿ™‚ Yummy and just about right for a girl with a cold and little appetite.

Soon after breakfast, I proceeded to have a mini-panic attack, boo. It subsided about an hour later. I put puppy in bed with Luke to hang while it happened, and thankfully they both slept through it. (Yes, that lump below is my sleeping man!)

By about 1:00 p.m. I was over my attack, thank goodness! And around 2, I was definitely hungry for a real lunch, so I make a sandwich (turkey, pepper jack cheese, spinach, whole wheat bread, ranch) and sliced up a small Honeycrisp apple and added a dab of PB.

I made my usual snack of carrots, salsa, and ranch dressing around 5 after a long nap with the pup, and I drank some Earl Gray tea – tea is my life when I’m sick.

Dinner was a nice big chicken salad with chicken breast, tomatoes, bleu cheese, pepper jack cheese, spinach, ranch, and of course some salsa. ๐Ÿ™‚ I topped it all with a fried egg.

After dinner, I took Serina for a nice walk, probably the longest one she’s ever been on in her little life, to work out some of that puppy energy! It did the trick, and I enjoyed taking her out! I foresee long walks in our future.

Now we’re off to rest after that long walk!

Eating for Gains + That New Puppy Smell

It’s been quite the past two days with our new baby Serina – she’s slowly getting the idea to go potty on walks and is walking on the leash as well as aย  7 week old puppy can!

And how are the cats reacting, you might ask? They’re *tolerating* the puppy but they’re not thrilled. I apologize for the blurry photos, these were taken at night.

We’re trying to give tons of kitty cuddles out as much as we can!

Unfortunately, I woke up with a head cold/sore throat, and I honestly wasn’t feeling my best today – see my bun look below (the bun doughnut is a last resort for me usually).

I also realized while looking in the full body mirror at Eddie Bauer that I’m “skinny fat.” That means I’m skinny but I have no muscle. My goal is to change that by modifying my diet (eating 3-4 times a day) and hitting the weights at the gym with Luke once I’m feeling better – watch this spot!

For today though, I simply changed my diet a bit.

Breakfast was 1/2 C of oatmeal with pumpkin, banana, and PB. YUM! I ate around 9 a.m.. and wasn’t hungry again until lunch.

Now, we were out of food for lunch and dinner, so I had Luke pick me up a Boar’s Head salad at Pak A Sak when he drove over to see his friend Marc, and we made plans to go grocery shopping. This salad had cheese, ham, bacon, an egg, cucumber, tomatoes, and ranch dressing. This happy little salad was consumed around 2 p.m. and kept me very full. ๐Ÿ™‚

After I ate lunch, I took Serina over to my mom’s house to play! Mom and my twin sis Jenny were there and helped me wear her out!

The pupper frolicked and played and rolled in the grass and of course received extra loving from my mom and Jenny!

After Serina’s hour long play at Mom’s, we put her in her crate to sleep (and sleep she did!), and Luke and I ran to Sam’s Club for some bulk food. We’re lucky to live close to United, Sam’s Club, and Walmart, so food is always very accessible.

My snack eaten around 5:20 ish – it was an un-pictured glass of grapefruit juice, a large organic carrot, and some baby tomatoes tossed with S+P and red pepper hummus on the side.

After Luke headed to work at 6, I began my copious tea-lemon-honey drinking. I used Earl Gray, and it soothed my darn throat while my sweet little charge slept and slept! Serina and I tried to keep our attitudes positive with all this sickness – Luke had it first, and now it’s my turn.

(Yes, she ended up sleeping on my shoulder!)I ate dinner around 7:40 – I had a Brussels sprout and kale bagged salad with chicken on top and some black bean salsa (my fav).

Serina and I watched TV (well, mainly me – she was asleep most of the time) with the sleepy kitties and waited impatiently for Luke to come home (midnight) with some NyQuil.

Eventually he came home to much fanfare from pup …

… and kitty alike!

Alrighty, I’m off to nurse this cold!
